I just love Tex-Mex food. Hearty and spicy, it’s a great excuse to break out the hot sauce, one of my not-so-secret delights! However, good authentic Tex-Mex can be hard to find on island. If you’re an enchilada fan, make it a point to visit Carmen’s Mexican Restaurant at Pavilions and Pools Resort, where you’re sure to say “OLÈ” to some great authentic flavors – with or without the hot sauce! There is absolutely no way you can leave hungry after a meal at Carmen’s. Bill believes in healthy portions, and by the time he adds the sides of rice and refried beans (the best this side of Mexico!), you probably need a bigger plate.
